سنگ گچ کانی کلسیم داری است که تحت عناوین ژیپس یا سولفات کلسیم آبدار نیز شناخته می شود. این ماده معدنی در ساختار خود، دارای دو مولکول آب متبلور است که عامل کاربردی شدن آن می باشد. چنانچه سنگ گچ پس از استخراج، آسیاب و پودر گردد، حلالیت کمی در آب داشته و قابلیت تشکیل ملات را ندارد.

سنگ گچ در ابتدای فرایند فرآوری، خرد شده و به قطعات کوچکتر تقسیم می شود. یکی از مراحل مهم و تاثیرگذار در کیفیت محصول نهایی، مرحله پخت در کوره است. سنگ گچ در دما و زمان مشخص، دهیدراته شده و سپس به سمت آسیاب هدایت می گردد.
در مرحله نهایی، سنگ دهیدراته توسط چکش های قوی، پودر و سپس سرند می شود.

در صنعت، با خارج کردن بخشی از مولکول های آب تبلور در کانی، نظم ساختاری آن را مختل می کنند. به این ترتیب با ایجاد تمایل به جذب آب جهت رسیدن به پایداری اولیه، امکان ایجاد ملات را از گچ فراهم می آورند. لذا چنانچه گچ در مجاورت آب قرار گیرد، به سرعت آب مولکولی از دست رفته را جذب و مجددا به سنگ تبدیل می گردد.

در انتخاب سنگ گچ مرغوب، توجه به فاکتورهای زیر حائز اهمیت می باشد:
- درصد ژیپس
- میزان رطوبت
- رنگ کانی
قطعا هر چه درصد ژیپس موجود در سنگ، بالاتر بوده و میزان ناخالصی های آن کمتر باشد، رنگ آن سفیدتر خواهد بود
